Breakfast veggies are always a challenge for me, I just can't warm to salad in the morning. Expecting kids to eat veggies with breakfast is even more of a challenge. So I'm sharing my favorite breakfast veggie recipe with you! One thing to remember is that the amounts of spinach, spices and honey (or other sweetener) can be adjusted to your liking, I rarely measure them myself.
You could half this recipe for only a couple of people, I like to make enough to feed 4 people with leftovers for later.
Throw all these together in a blender and blend until smooth.
4 Tablespoons Coconut Flour
1/8 Teaspoon Baking Powder
1/4 Teaspoon Salt
1 cup Fresh Spinach
1/4 cup granulated Honey or other sweetness (picture of what I use below)
The batter will be runny, that is the nature of crepes. I've heard two ways to cook them. I use a generous amount of either butter or oil in a stainless pan on low heat, flipping them when the edges are lightening up. The other method is to pour out a circle on parchment paper and microwave them for 30-40 seconds.
Sometimes I add blueberries to them once they are in the pan, either plain or with berries, they get eaten up pretty quick!
